Ingredients
- 2-3 tbsp oil
- 2 tsp cumin
- optional: 1/2 tsp of crushed cardamom, clove, cinnamon
- 1.5 large onion, finely chopped
- 1.5 jalapeno, finely chopped
- 1 tbsp ginger garlic
- 1 tomato, finely chopped
- 1 bell pepper chopped
- 1/4 cup of water
- Spices:
- Garam Masala: 5.0 tsp
- Coriander: 3.5 tsp
- Chili Powder: 2.5 tsp
- Turmeric: 0.5 tsp
- Salt: 1.5 tsp
- Pepper: 0.25 tsp
Instructions
Keema (Ground Chicken)
- Heat oil in a pan
- Add cumin seeds and toast for 30 seconds
- Add onions and salt, and cook for 4 minutes
- Add ginger-garlic paste and sliced chilies, and cook for 10 minutes
- Add tomato and some spices (1 tsp chili powder, 1/2 tsp turmeric, 1 tsp coriander powder, 1/2 tsp garam masala). Stir well and cook for 10 minutes.
- Spread the aromatics into the outside of the pan. Add the ground chicken and spread into a layer. Cook for 5 minutes undisturbed so the chicken can brown.
- Add some more spices:
- 1 tsp coriander powder, 1/4 tsp chili powder, 1 tsp garam masala, 1/2 tsp salt, 1/4 tsp pepper
- Add the chopped bell pepper and mix well. Add 1/4 of water, mix well, and cover with a lid. Cook for 5 minutes.
- Remove the cover, mix well, and add some more spices. Layering the spices as we’re doing will add more depth of flavor.
- 2.5 tsp garam masala
- 1.25 tsp coriander powder
- .5 tsp chili powder
- .5 to 1 tsp of salt (to taste)
- Check that the chicken is done using a thermometer.
- Garnish with cilantro and a squeeze of lime.
Assembly
- Toast burger buns
- Spread some tamarind sauce (or another sauce you like) on the bottom bun.
- Add few big spoons of chicken keema.
- Top with diced onions and cilantro.
- Serve! Serving suggestion: 1-2 burgers per person, depending on the bread size.
Total burgers: ~6 burgers (4 big servings)
